So. When you eat keto, you can have a ton of bacon. And bacon is good. Everyone likes bacon, right? But at some point in your life you think “I think I am good on the bacon front.” Interestingly enough, a lot of people love keto because they get to eat a bunch of food that was previously thought of as bad because it has so much fat in it. I personally do not enjoy copious amounts of bacon or a lot of eggs so these keto advantages are not helpful to me. However, I have recently discovered the deliciousness of….. *suspense music* HEAVY WHIPPING CREAM!
Seriously… you can have it in coffee (my personal favourite) or create amazing ice cream treats which I am about to show you.
I found this recipe on Maria Mind Body Health and I think it might be the best thing I have made on keto so far.
Ingredients are as follows:
ICE CREAM LAYER: 1 cup organic heavy whipping cream 8oz cream cheese 1/4 cup Swerve 1/2 tsp Celtic sea salt (helps from hardening too much) NUGGET LAYER: 1/4 cup butter 1/4 cup Swerve 1/4 cup JAY ROBB vanilla egg white or whey protein 1 cup cream cheese 1/2 cup natural almond butter OR peanut butter 1 tsp vanilla 1 cup peanuts or almonds, chopped CHOCOLATE LAYER: 2 TBS butter or coconut oil 1 oz unsweetened baking chocolate 8 TBS heavy cream 1/2 cup confectioners Swerve (or powdered erythritol) 1 tsp stevia glycerite
I will say these are fairly time consuming to make since you have to freeze them after every layer. After making the nugget layer I could hardly contain my excitement. Luckily, it was extremely cold when I made these so I could just set them on the BBQ and they would freeze fairly quickly.
Anyway, I split them with my family so have 6 snickers treats total. There may or may not be 1 remaining….
